The longer you wait, the sweeter they become. Pick them green or be patient and wait while they change from red to plum-colored. Most often they are picked right between the green and red stages when they are nice and firm.
Once fully ripe, use the juicy berries in beverages and desserts, as well as being made into preserves, chutneys and sauces! Green fruits are often used for sweet-tart wine, pies and preserves that hold their shape after being baked.
